Reverse Diet Crab Cakes

 

1 pound crabmeat chopped fine

1 egg

1 teaspoon lemon zest

1 teaspoon of Worcestershire sauce

1 teaspoon fresh basil, chopped

½ cup plain whole wheat bread crumbs

½ cup non fat yogurt

1 tablespoon of Italian seasonings / no salt added

4 tablespoons vegetable oil

 

In a large mixing bowl, combine crabmeat, 1 egg, lemon zest, Worcestershire sauce, chopped basil, bread crumbs, yogurt, and Italian seasonings. Mix thoroughly.

Form 5 ounce patties out of the crab mixture (should make about 4 patties), and chill until cold before cooking.

In a skillet, heat 4 tablespoons of oil over medium heat. Sauté the crab cakes for 4 minutes on each side or until golden brown.

Reverse Diet Oatmeal, Raisin, and Peanut Butter Cookies

 

3 egg whites

1 cup packed lite brown sugar

1 cup reduced fat/ no sugar/salt added peanut butter

1/2 cup unsweetened applesauce

1/4 cup honey

2 teaspoons vanilla extract

1 cup unsweetened raisins

½ teaspoon ginger

3 cups quick-cooking oats

1 cup all-purpose whole wheat flour

1 cup nonfat dry milk powder

2 teaspoons baking soda

 

In a mixing bowl, beat egg whites and brown sugar. Beat in peanut butter, raisins, applesauce, honey, ginger, and vanilla. Combine the oats, flour, milk powder and baking soda; gradually add to peanut butter mixture, beating until combined.

Drop by tablespoonfuls 2 in. apart onto baking sheets coated with nonstick cooking spray. Bake at 350 degrees F for 8-10 minutes or until golden brown. Remove to wire racks to cool.

Makes 36 cookies- 2 cookies per serving

Reverse Diet Braised Pork Loin

 

1 pound thinly sliced pork loin

AlsoSalt and pepper to taste

1 tablespoon unsalted butter

1 tablespoon extra virgin olive oil

1 teaspoon turmeric

1 cup water

1 cup dry white wine

3 tablespoons chopped fresh cilantro

 

Season meat with AlsoSalt and pepper to taste.

In a large skillet, heat butter and olive oil over medium heat. When skillet is hot, place sliced pork loin into skillet; cook until browned, turning once. After both sides have browned nicely, add water, and cook until liquid thickens.

Stir in dry white wine, scraping the bottom of the pan. Reduce heat, and simmer until liquid is reduced by half. Remove from heat, and allow to cool slightly. Stir in cilantro. Spoon sauce over pork when serving

Makes 4 servings

 

 

Reverse Diet Baked Pepper Supreme

1 cup of sliced green bell peppers

1 cup of sweet red peppers

2 tablespoons of minced garlic

½ teaspoon thyme

1 tablespoon dried parsley

2 tablespoons of lemon juice

½ cup balsamic vinegar

1 teaspoon AlsoSalt

Fresh ground black pepper to taste

 

Preheat oven to 350 degrees. In a shallow baking dish, spread peppers evenly over bottom. Add garlic, thyme, parsley, lemon juice, vinegar, AlsoSalt, and black pepper in a small bowl and mix well. Pour mixture over peppers and cover with a lid or foil. Bake for 20 minutes. Remove from oven and let stand for an additional 10 minutes. Remove cover and serve.

 

Makes 2 servings

 

 

Reverse Diet Shredded Wheat and Cinnamon Apple Bake

 

8 apples

1 cup all-purpose whole wheat flour

1 cup sugar substitute

1 tablespoon baking powder

1 egg

1 1/2 tablespoons ground cinnamon

1/4 cup sugar substitute

2 tablespoons unsalted butter, melted

1 cup crushed shredded wheat

 

Mix together flour, 1 cup sugar substitute, baking powder, and egg. The mixture will look like cornmeal.

Peel, core, and slice the apples. Mix together with 1/2 tablespoon cinnamon. Place apples in a greased 8 inch square pan. Spread flour mixture over the apples. Mix together 1 tablespoon cinnamon, shredded wheat, and 1/4 cup sugar substitute; sprinkle over the top of the crisp. Drizzle with butter or margarine.

Bake at 300 degrees for one hour. Serve warm or cold

Makes 12 servings
